The secret of wine: c'est la Loire; all winemakers tell me this! La magie de la Loire. Its true but it is reductive. It is always a question of knowledge therefore cultural. It is knowledge combined with experience and brilliant intuitions that make a wine magical . My day at the Cyril Le Moing company marked forever the awareness of what it means to be a winemaker with a capital V, a kind of way of no return. My friend Cyril has something special as a person. Strong and complex personality mixed with the generosity of the free man perpetually uneasy in search of absolute harmony with his surroundings. And his wines are the faithful mirror of this personality, never banal, never the same. Curious look, damn honest man (when I met him his wine cost 7 euros !!!). They are timeless wines without borders without definitions, but full of charm and not easy at all, rather complex because they require attention, application, not for everyone in the true sense of the term. Indigenous wines of the Loire such as Cabernet franc, grolleau, chenin and then cabernet sauvignon, chardonnay and gamay. Very few almost cult bottles. You never see it at a fair, not out of snobbery, but rather because of the extreme confidentiality that makes it a character of infinite class and that you would like to have as a friend at all costs.
The vineyards needless to say are beautiful, the gardens with the right harmonious disorder, pulsate loira h24. The tasting for Cyril is a rather serious moment, it grants and demands concentration and attention, almost demanding respect for a job that is not easy .
Unfortunately I understood this late, so I apologize for having experienced the thrill of the vineyard and the cellar rather than tasting in the classic sense. But i remember .
But I remember a chardonnay and a cabernet sauvignon that made me stand up from my chair for how incredible they were. These wines were the real surprise as I expected the magic of chenin and cabernet franc but not of Cyril's chardo and cab sauvignon.
The greatness of this man is measured not only in his splendid wines, but in his stubborn obstinacy in believing in the world of free wines without adding anything, to arrive at the true essence; thanks to Cyril I was able to know and appreciate many vignerons who like him believe in this mission, because it is never just wine!
